Pickled Red Onions

 

1 Medium Red Onion,thinly sliced

3 Cups Water

1/3 Cup Apple Cider Vinegar

1/3 Cup Water

1 1/2 Tbsp Maple Syrup

1/4 tsp Salt

2 tsp Peppercorns

 

Bring 3 cups of water to a boil. 

 

Place sliced onions in a bowl, pour the boiling water over the onions. Let sit for 5 minutes, then drain.

 

In another bowl mix vinegar, 1/3 cup of water, Maple Syrup, salt and pepper. Stir well. Add onions and let sit for 10 minutes.

 

Place in a jar and store in the refrigerator.
