Cauliflower Fritters with Curry Sauce

Cauliflower Fritters
1 head of Cauliflower
2 Eggs
½ Cup Flour
½ tsp Baking Powder
Salt & Pepper to taste
½ tsp Garlic Powder
Coconut Oil for frying

Sauce
1 Cup Yogurt, plain
1 Tbsp Great River Maple Syrup
¼ tsp Garlic Salt
¼ tsp Black Peppercorn
1 tsp Curry Powder
1 Lime, juiced
¼ tsp Red Pepper flakes

In a bowl you can mix all the sauce ingredients together.

Chop cauliflower into chunks and then blend in food processor. Making sure the cauliflower all has the same consistency. Then mix the eggs, flour, baking powder, salt, pepper and garlic powder together.

Heat coconut oil in pan. Shape the cauliflower mixture into ovals and fry until brown and crispy on both sides. Remove fritters and place on plate covered with paper towels, continue until all fritters are done.

Enjoy while fritters are hot and complimented by the curry sauce!
